研究领域

综合利用食品科学、分子生物学、分析化学、植物病理学等技术手段,开展食品中镰刀菌毒素等真菌毒素的安全性评价与控制研究:(1) 采用人源性细胞/靶动物等体内体外模型评价镰刀菌、链格孢菌等毒素及其隐蔽型污染的(联合)毒性,揭示其毒性作用与释放机制,为国家真菌毒素相关安全限量标准制(修)订提供基础数据与科学依据。(2)研究镰刀菌、链格孢菌等真菌毒素污染发生的调控机制及生物降解毒素关键基因功能,解析相关分子识别机制,形成基于菌剂、酶制剂的真菌毒素污染安全控制技术及规范。(3)研究多组分真菌毒素(含隐蔽型)同时定量与快速免疫检测新方法,研发标准物质与实用检测产品、技术标准等,开展真菌毒素内外暴露风险评估研究,为政府部门、大型企业等食品安全监管与真菌毒素防控提供技术支撑。
