Research Areas

  1. Biopeptides: Peptides released from proteins in vivo or in vitro exhibit various physiological activities. My research interest is to investigate peptides activities and profiles in the food processing and gastrointestinal tract by peptidomics method. We presented the integrated approach of LC/MS/MS and bioinformation to identify bioactive peptides from protein hydrolysates. ACE inhibitory peptides, DPP-IV inhibitory peptides have been identified from deer plasma, bee pollen and milk proteins respectively. The present research focuses on peptidiomic study of yogurt proteins after simulated gastrointestinal digestion by LC/MS/MS.

  2. Functional Food and Nutriceuticals: In this research field, my interesting is developing the method of extracting bioactive compounds from herb and producing bioactive peptides from proteins. The producing procedure of deer plasma peptides by enzymatic hydrolysis has been applied industrially. The deer plasma peptides have been used as commercial nutraceuticals.
